Vegan Rice Krispie treats can be hard to make. First you need to find puffed rice cereal without vitamin D3 as that contains lanolin usually from sheep then you need vegan marshmallows. Even after finding these things, my attempts were usually harder than the ones I remembered as a kid and were rock hard by the next day. I wanted nice and soft pillowy Rice Krispie treats dammit so that’s what I set out to make.
I saw recipes years ago that used sweetened condensed milk and since there weren’t a lot of vegan versions out there at the time, I never tried them. Until now. Recently, Nature’s Charm came out with vegan sweetened condensed oat milk and I thought it was time to give this another try. These exceeded all my expectations and were super soft, delicious and stayed that way for days.
These are pretty easy to make. You melt the vegan butter, add the marshmallows, and condensed milk and some vanilla and then add the Rice Krispies (or vegan equivalent) and press into a pan. Super yummy.
Adding vanilla brings out the flavor in the marshmallows but you could add clear vanilla or cake batter extract if you want more of a bakery cake flavor. Here are some other ideas for mix-ins and flavor combos.
Flavor ideas:
- Add 1/3 cup of creamy peanut butter for PB Rice Krispie treats.
- Add chocolate chips and chopped up grahams for a s’mores version!
- Add crushed freeze dried strawberries for a strawberries and cream treat!
- Add 1 teaspoon cinnamon and chopped up dried apples for an Apple Jacks Krispie treat!
If you can’t find the condensed oat milk (I bought it at Whole Foods Market), there are a number of coconut condensed milks on the market you can use. I’ve seen recipes to make your own but I’ve never tried them and I haven’t tested anything else. Coconut cream might possibly work but I’m not sure. I hope you love these gooey soft and delicious gluten-free and vegan treats!
Wow! You’ve done it again. I’ve never had vegan Rice Krispie treats turn out as perfect as these did. I used condensed coconut milk because that’s what I could easily find and they turned out perfectly. I think the mild coconut flavor was really nice.
