Vegan Coconut Crème Eggs with Taza Chocolate

This is a super easy recipe for spring or Easter made with Taza chocolate and a few other ingredients! Taza makes dark and almond milk chocolate so you can coat them with dark or milk (or both like I did!).

The filling is just two ingredients and you can tint it using natural food coloring or leave them plain. You just need to melt the chocolate then dip shaped coconut “eggs” into it and let them set. Sprinkles are optional but recommended! This would be a super fun project to make with the kiddos.

Some chocolate needs a bit of extra fat to make it not get so hard that it cracks apart when you bite into it after it sets. Taza doesn’t need it but if you use another brand of chocolate, you may want to add 1/4 teaspoon of coconut oil after melting.

You could flavor the filling in these eggs if you like too. Almond, raspberry even orange might taste great but I left them plain. I also used natural food coloring and sprinkles which you can buy at a number of grocery stores now and online (I have some options in my Amazon store link at the bottom of the recipe). Tint them any color you’d like!

A delicious and easy candy recipe for coconut crème eggs made with just a few ingredients!

Ingredients

  • Two 2.5-3 oz bars of Taza chocolate or your favorite vegan chocolate

  • 2 1/2 cups sweetened coconut flakes

  • One 7 oz can sweetened condensed coconut milk

  • natural food colors, optional

  • natural sprinkles, optional

Directions

  • In a bowl, mix the coconut and coconut condensed milk together until well combined. Tint with food coloring if desired then refrigerate for a half hour. Shape the coconut into small egg shapes then return to the fridge for another half hour.
  • Melt the chocolate in the microwave or using a double boiler watching carefully so it doesn’t burn. I cook in the microwave in 30 second increments and take it out when there’s still some solid pieces left then stir letting the residual heat melt it completely. All microwaves vary in strength so watch carefully so it doesn’t burn.
  • Using a fork and spoon, place a coconut egg on the tines of the fork and dip into the melted chocolate and using the spoon, coat it completely. Shake the fork up and down to remove any excess chocolate then place on a parchment or wax paper lined sheet pan. Add sprinkles if desired. Repeat the process until all are dipped then return to the fridge to set then enjoy!
