Easy Vegan S’mores Bars

S’mores are great but truth be told I can never get them just right so that they’re super delicious when made outside. Either the graham cracker is too hard or I don’t get the marshmallow toasted all the way through. Anyway, I’d much rather eat them in bar form and since I always loved those magic bars since I was a kid, I wondered if I could make a s’mores version? Those always called for sweetened condensed milk and although you can buy it vegan now in stores, it still can be hard to find. I wondered if I could create the same effect but with just marshmallows and full fat coconut milk and I think I’ve done it! With only a few ingredients, these are gooey and chewy and in my opinion much more satisfying than a traditional s’more.

Let’s talk graham crackers. It’s so hard to find them without honey but Nabisco still makes plain ones and you can find them at Walmart and other retailers as well as Amazon (link to my store at the bottom of this recipe). You could use a graham style cookie like Annie’s or another brand and since you’re crushing them anyway, they’ll work just as well. Chocolate cookies or even cinnamon graham crackers would work as well. The cinnamon would give it a Mexican hot chocolate vibe and be very tasty!

Mini vegan marshmallows work best in this but larger ones will be just fine if that’s all you have. The base layer melts anyway and if you want smaller discs of marshmallows, you can always slice them in discs in thirds if need be and scatter them over the top. You can find Dandies brand at a lot of retailers and Trader Joe’s also makes their own marshmallows vegan! The minis are seasonal around the holidays and the larger usually are around during the summer months. I’ve even found vegan marshmallows at Walmart.

For the chocolate, you can use chips or chunks but use a good quality vegan variety. I used Trader Joe’s chunks and they’re delicious. The only trick here is to mix 2/3 of the marshmallows with some full fat (don’t use lite) coconut milk and melt it first on top of the crust creating a gooey base layer of marshmallow almost like what condensed milk in a magic bar would do. Other than that, these are super easy to put together and the only real waiting time is for them to cool. If you’re super impatient you can pop them into the fridge for a half hour then slice into bars. I hope you enjoy these super easy treats!

A super easy bar cookie made with graham crackers, vegan marshmallows, chocolate and no condensed milk needed!

Ingredients

  • 2 cups (about 2 sleeves) vegan graham crackers or equivalent vegan cookies plus a few more for crumbling

  • 3/4 cup vegan butter, melted

  • 1 pack pack vegan mini or regular marshmallows

  • 1/4 cup full fat coconut milk

  • 1 cup vegan chocolate chips or chunks

Directions

  • Preheat oven to 350°. In a food processor, add the graham crackers or cookies and pulse until they’re fine crumbles. Add the melted vegan butter and pulse until combined. If you don’t have a food processor you can place the cookies in a plastic bag then pound them with a rolling pin until they’re crumbled. I line an 8×8 baking pan with parchment but it’s not necessary. I use it because it makes the bars easier to remove once baked. I even use binder clips to hold the parchment in place. Press the crumbs into the pan evenly and bake for 10 minutes.
  • While the crust is baking, combine 2/3 of the bag of marshmallows with 1/4 cup full fat coconut milk and fold together. When the crust is done, pour the marshmallow/coconut mixture immediately on top of the cooked crust and spread out evenly. Pop back into the oven and bake for another 10 minutes.
  • Remove the pan and layer the remaining marshmallows, chocolate and some crumbled graham crackers evenly over the top. Bake for another 5 minutes. Cool completely, cut into bars and serve!

Notes

  • Use a sharp knife to cut into bars. I start in the middle and cut in half then cut each half into another even half as it’s easier to see than trying to cut into fourths by eye starting from one end.
