Easy Vegan Almond Crescents

This is a super easy recipe for what I’m calling “almond crescents” because we’re using premade crescent roll dough and they’re really not a croissant so there we go. They are delicious though and best eaten warm from the oven. I hate to even call this a recipe as it’s more of an easy method of making a treat using almond paste. Trader Joe’s recently released almond paste in a tube and some weren’t sure how to use it so I came up with an easy way to make a super tasty treat!

There are so many recipes out there dating back to the mid-1960s when Pillsbury introduced refrigerated crescent roll dough to Americans. Since then it’s become a staple of many holiday dinners and has spawned thousands of recipes using the dough. I’m sure I’m not the first to create these but there’s something about that warm almond paste in these that’s simple, classic and utterly intoxicating.

The method for these couldn’t be simpler. Just unroll the dough into their pre-shaped triangles then mash some of the almond paste into a rough flat triangle, lay it on the dough then roll up! I used some vegan cream to brush on top then sprinkle with some turbinado sugar and bake. Easy peasy.

Some filling ideas!

  • Add some chocolate chips in with the almond paste for a twist!
  • Add some dried fruits like raisins, cranberries or cherries.
  • Add some orange zest on top of the almond paste.
  • Spread a thin layer of raspberry or apricot jam on top of the paste before rolling up.

Easy Vegan Almond Crescents

A tasty, easy crescent style roll filled with almond paste that’s quick to make.

Ingredients

  • 1 tube of premade crescent roll dough

  • half a tube of almond paste

  • 1 tablespoon vegan heavy cream

  • turbinado sugar for sprinkling

Directions

  • Preheat your oven to 350° and line a half sheet pan with parchment paper or a silicone mat and set aside.
  • Unpackage the dough and separate into the eight preformed triangles. Open the tube of almond paste and squeeze a blob of it between your fingers to flatten into a rough triangular shape. Place that on top of the triangle of dough and roll up. Pinch the ends together slightly and even tuck under for a cleaner look and place back on the baking sheet. Repeat for all eight rolls.
  • Using a pastry brush or by dipping, brush the top of each roll gingerly with some vegan heavy cream. Be careful not to douse them with liquid. You just want a little so they’ll brown a little and be sugar can adhere better. Sprinkle with some turbinado or “raw” sugar on top. You can use regular sugar as well but they won’t be as crunchy or look as nice. You could use sanding sugar as well.
  • Bake for 10-12 minutes until starting to brown on top. Serve warm. All ovens vary so check for doneness after 8 minutes and every few minutes after that. You don’t want them to burn.

Notes

  • I used Trader Joe’s organic crescent rolls and their almond paste and vegan cream but you can substitute any similar products like Pillsbury and another brand of almond paste vegan heavy cream.

  1. Easy and delicious! I added brushed with almond milk before baking. I added a glaze on top with sprinkles on half and almond slices on the others. It reminded me of a bear claw, soo yummy!

  2. So easy and delicious! I ended up skipping the heavy whipping cream and sprinkling with powder sugar after baking.
    My husband devoured them. Definitely going to become a recipe I use again and again!
