The Easiest Vegan Chocolate Fudge

It’s national fudge day! I love fudge even though it tried to kill me once in Pennsylvania Dutch Amish country. Long story short, I choked on a sample and it melted and covered my windpipe and I thought it was curtains for me for a minute. I survived though and hold no grudge with fudge. Candy making can be difficult and require special thermometers and meticulous attention so it doesn’t all go wrong but this is the easiest and best vegan fudge you’ll ever make and requires no special tools and is made with just three main ingredients!

Three main ingredients:

  • Vegan condensed milk. I used Nature’s Charm vegan condensed oat milk but condensed coconut milk will work as well but will impart a slight coconut taste.
  • Vegan chocolate chips. The recipe calls for three cups (pretty much two standard sized bags) and I like to use a mix of semisweet and bittersweet as I feel it’s the best of both worlds. Not too sweet and not too bitter tasting. You can use whatever combo you like or even vegan milk chocolate but that would be very sweet.
  • Vegan butter. I used a stick style but a tub variety will work as well. The ones in the tub generally contain more water so a thicker stick style is preferred but won’t affect the texture so much.

The method:

I made this all in the microwave and it only took two minutes (see I said it was easy!) and then I mixed in some vanilla and nuts which are optional. You can cook this in a saucepan on the stove as well and should cook just as quickly as you need it just melted then you turn off the heat and continue stirring until completely melted. In traditional candy making you normally use granulated sugar and even a few unmelted crystals can cause a chain reaction making your candy grainy and unpleasant to eat. By using condensed milk, we eliminate the chance of that happening and the taste is the same if not better than traditional fudge and no monitoring for soft ball stage (a candy making teen for when dropped into water it forms a small ball).

Fudge flavor ideas!

  • Rocky road! Add mini vegan marshmallows and roasted almonds for a rocky road version.
  • Peanut butter! Add a few tablespoons of peanut butter and roasted peanuts!
  • Mint chip! Add 1/2 teaspoon peppermint extract and some white chocolate chips!

The best and easiest vegan chocolate fudge you’ll ever make and it’s so delicious!

Ingredients

  • 3 cups vegan chocolate chips (approximately two 10-12 oz bags)

  • 1 11.25 oz can vegan sweetened condensed milk (see notes)

  • 1/4 cup vegan butter cut in 4 pieces (see notes)

  • 1 pinch salt (1/8 teaspoon)

  • 1 cup walnuts (or nut of choice), chopped, optional

  • flaky finishing salt, optional

Directions

  • Butter and line an 8-inch square baking dish with aluminum foil (leaving a 1-inch overhang on all sides), and butter foil.
  • Combine chocolate chips, vegan condensed milk, butter and pinch of salt in large microwave-safe bowl. Microwave on medium heat until chips are just melted checking in one minute intervals, stirring once or twice during the cooking. My microwave only took two minutes total but depending on the strength of yours, it could take more or less time. You don’t want to burn it so cook just until chips are mostly melted and finish melting then by stirring until completely melted out of the microwave. You can also cook on the stovetop in a saucepan.
  • Add the vanilla and nuts if using and stir to combine. Pour into the prepared pan and smooth out with a spoon or spatula. Sprinkle with more nuts and flaky finishing salt if you’d like.
  • Refrigerate for two hours or preferably overnight and cut into desired squares and serve. Fudge can be frozen or refrigerated.

Notes

  • I used a combination of semi and bittersweet chips.
  • I used sweetened condensed oat milk but you can use condensed coconut milk as well.
  • Use thicker stick style butter if possible but tub style vegan butter will work as well.
