Vegan French Onion Soup Burger

Bonjour! Let’s take a vegan burger, infuse it with onion soup goodness then add savory caramelized onions, lots of melty vegan cheese and place it on a vegan brioche bun shall we? C’est magnifique! (Five years of French and this is about all I remember…) So this burger is basically my popular slider recipe but made into bigger “grand” (more French!) burgers. I’ve also created a quick and easy way to make onions taste like soup. It’s pretty incredible, so let’s get started!

My slider recipe is pretty easy but does contain a few unconventional ingredients. Peanut butter (or any other nut butter you prefer) is one, then a packaged onion soup mix is another (I prefer Lipton’s onion mushroom mix as it’s less strong and more savory than the traditional mix). You can use a brick of vegan ground beef (I use Beyond Meat) or 4 large fatty vegan burgers (resist the urge to use low fat burgers). You’re going to mix it all, let it chill, then form it into 4 patties. You can grill, pan fry or even bake these. Grilling (which I did) can make them a little drier so try to not overcook them. Pan frying will probably be the juiciest but I bake my sliders per my recipe as they’re cooked as a whole slab, surrounded by onions and cut into small pieces later. You can certainly bake these as well and even surround them with onions per my original recipe if you prefer. I would just add the alcohol of choice and soy sauce to the onions before baking to give them that onion soup flavor.

For the onions, you’re going to sauté sliced onions in vegan butter then add a little sugar, some booze (it’s what makes it French!) then some soy sauce. It really makes them taste like onion soup! I like using yellow onions but sweet onions or red ones will also work.

The bun plays a big part too. I know finding vegan brioche style buns isn’t easy but Whole Foods and Gordon’s Food Stores carry them near me. Using another soft bun will be fine but if you can find vegan brioche, you’re golden. I grilled my bun too but you can toast it, warm it in a pan with butter or just serve them at room temperature. Your choice!

Last thing to talk about is the fromage, I mean cheese! I used a vegan sliced cheese but you could use shreds too if that’s what you have. Just make sure to pick one that melts well. There are so many vegan cheese options on shelves now that are really good so choose your favorite.

Make the most magnifique vegan burger that tastes like French onion soup!

Ingredients

  • Onion Soup Onions
  • 2 medium yellow onions, sliced 1/4” thick

  • 1 tablespoon vegan butter or oil

  • 1 teaspoon vegan cane sugar

  • 1 tablespoon sweet vermouth, sherry or wine

  • 1 tablespoon soy sauce, tamari or liquid aminos

  • Onion Soup Burgers
  • 1 pack fatty vegan ground meat or four burgers (see notes)

  • 1 packet Lipton onion mushroom soup mix (see notes)

  • 1 tablespoon creamy peanut butter or other nut butter (see notes)

  • 1/3 cup plain unsweetened vegan milk

  • Burger Additions
  • vegan brioche or other soft burger buns

  • vegan sliced cheese

Directions

  • Onions
  • Melt the vegan butter in a medium saucepan over medium heat. Add the sliced onions, cover, and cook for 5 minutes. Add the sugar and continue to cook on low heat uncovered for 10 minutes. Add the alcohol, and soy sauce and continue to cook uncovered for another 5 minutes until darker in color and until most of the liquid has been absorbed. You can make these in advance and refrigerate until needed. They taste even better the next day.
  • Burgers
  • In a large bowl, add all of the burger ingredients and mix well with a large spoon or by hand. Cover and refrigerate for at least an hour. Form into four large patties then cook however you prefer. You can grill, pan fry or even bake these.
  • Top burgers with cheese, onions and serve on toasted or grilled buns. Enjoy!

Notes

  • I use Beyond Meat burgers or ground for this but other brands will work. Just make sure it’s got a good fat content. Leaner vegan ground beef will make the burgers dry.
  • I prefer Lipton onion mushroom soup mix as it’s milder than the traditional onion flavor but there are other vegan soup mixes out there like Simply Organic brand and store brands. Just check the ingredients to make sure they’re vegan.
  • Use any nut butter you like but I prefer peanut. Almond, cashew or sunflower would be great options.
  • Use a plain unsweetened vegan milk. I prefer soy, but any other kind will work.
  • I like using sweet vermouth in my onion soup and hence these onions, but a sweet sherry, wine or even tawny port would work. If you don’t want to use any alcohol, just add a tablespoon of veggie broth or even balsamic vinegar.
  • You can also use sweet or red onions but I prefer the bite of plain yellow Spanish onions.
