Easy Vegan No Yeast Pizza Dough

It’s national cheese pizza day! That means vegan cheese around here! It’s crazy how many pizzerias offer a vegan cheese option now. Back in the day you would get just sauce on crust or sometimes a salad pizza which was basic salad on crust. Times have changed with the amount of dairy intolerant and vegans asking for options and I’m glad restaurants are finally listening! Even huge pizza chains are either offering or testing vegan cheese options.

I must confess. When I was a kid, I sometimes liked the pizza crusts from the box that you mixed together and pressed into a pan. I’m pretty sure Betty Crocker, Jiffy and Chef Boyardee all offered boxed crusts. There was also a local pizza place that made a cornmeal style that I don’t think had yeast (maybe it did, but since I haven’t had it in 30 years I don’t remember) and it was really good. I decided to recreate a version without yeast for those times when you just don’t have yeast (it’s been a hot product during the pandemic) or just don’t have time for a dough to rise.

You basically mix this together, press in a pan, top and bake! Even the culinary challenged can handle that right? Kids would definitely love to help make this too so get them in the kitchen early! The cornmeal gives it a depth of flavor and a slight crunch once baked and the small amount of sugar gives a hint of sweetness.

You can too this with any sauce, cheese and topping combos you’d like but I went traditional cheese pie on this one. This would be good as a white pizza too with pesto. I like to add a final drizzle of olive oil before baking and always add red pepper flakes and garlic powder before eating. Yum.

For baking you can use a traditional pizza pan or even a cast iron skillet for a deep dish version. You can also make individual pizzas which are fun because then everyone can top their own (some people like questionable toppings). So next time you say “I want pizza but we have no yeast!” make this quick version! You’re welcome!

An easy homemade vegan pizza crust when you have no yeast!

Ingredients

  • 1 cup yellow cornmeal

  • 2 cups all purpose flour

  • 4 teaspoons baking powder

  • 2 teaspoons vegan cane sugar

  • 1 1/2 teaspoons salt

  • 1 cup water

  • 1/3 cup olive oil (plus more for drizzling)

  • Pizza fixings
  • Vegan sauce, cheese and toppings

Directions

  • Preheat oven to 375° degrees. Brush a pizza pan or cast iron skillet with olive oil.
  • In a medium bowl, whisk the dry ingredients (corn meal, flour, baking powder, sugar and salt). Stir in water and olive oil and continue to stir until a soft dough forms.
  • Press the dough into your prepared pan and bake at 375° for five minutes.
  • Remove from oven. Top with sauce, cheese and toppings (if desired) and return to the 375° oven and bake for an additional 15 minutes until crust begins to brown.
  • Cut, eat and don’t burn the roof of your mouth!
