Vegan Strawberry Shortcake Ice Cream Bites

It’s National strawberries and cream day! Why not kick off the holiday weekend with a taste of summer and these ice cream truck taste-a-like bites! True story — we ran an ice cream truck one summer so we wouldn’t have to get “real” jobs and it was great for two weeks until all the kids went to summer camp. We also sometimes bought treats at the supermarket because it was actually cheaper than the distributor who we found out later was selling to a competitor called the “Pied Piper”. Such ice cream drama. Anyway, none of that here as these are crazy simple to make and even easier to eat.

This is the size of the crumbs you want.

You’re going to need some vanilla sandwich cookies and some freeze dried strawberries then your favorite vegan vanilla ice cream and a few other minor ingredients.

These crumbs would be great for a lot of different things!

  • As a topping for ice cream.
  • As a filling and topping for a cake or cupcakes.
  • As a topping for yogurt or fresh fruit.
  • As a crumb topping for a strawberry cheesecake or pie.

You can use any brand’s vanilla sandwich cookies you’d like. I also added some plain cookies into the mix so you could use a vanilla wafer, Lorna Doone cookies (what I used) or even just use more tops and bottoms of the sandwich cookies minus the cream (just scrape it off – cooks treat!).

A snack size vegan version of the summertime ice cream truck treat!

Ingredients

  • 4 vanilla cream sandwich cookies

  • 4 plain vanilla cookies (like Lorna Doones, vanilla wafers, or 4 cookie only rounds from the sandwich cookies – remove the cream)

  • 1/3 cup freeze dried strawberries

  • 1 tablespoon vegan butter, melted

  • 1 cup (or more!) of your favorite vegan vanilla ice cream

Directions

  • Using a small mini food processor, process the sandwich cookies and the plain cookies until they are small crumbs. Don’t crush them into oblivion, you want small pieces. If you have large crumbs left, you can mash them with the back of a spoon to make them into uniform crumbs. If you don’t have a food processor, you can place the cookies in a plastic bag then use a rolling pin to crush them evenly.
  • Place the freeze dried strawberries separately on their own in the food processor and pulverize them into a powder.
  • Add the melted vegan butter to the crumbs and mix to combine. Take out 1/3 of the crumb mixture, place into a separate bowl, then add the strawberry dust to it to create separate strawberry crumbs.
  • Spread the vanilla crumbs onto a piece of wax paper then using a spoon, drop sections of strawberry crumbs on top.
  • Using a small ice cream scoop or spoon, make balls of ice cream. If they become too soft, return them to the freezer to harden up for a few minutes. Roll the balls of ice cream in the crumbs evenly, then return to the freezer to harden.
  • Store leftover bites in a sealed bag or container and enjoy!
