There’s a virus running amok. You don’t want to go outside let alone to the store. You’ve run out of vegan butter, egg substitute, flour, sugar…all you have is a boxed brownie mix and a can of beans. You’re in luck! You’re about to make the moistest, fudgiest brownies ever! And they technically are kinda healthy-ish.
The Trader Joe’s mixes work really well, but you could probably use any vegan boxed brownie or cake mix. I chose their truffle brownie mix and am using northern beans but any plain beans like navy, chickpeas, etc. should work. The key is to blend them WITH their juice until completely puréed.
You can use a blender or large food processor to blend the beans but I found a mini prep to be ideal. Once blended, you’re just going to mix them into the dry mix and bake according to the directions but be careful not to over bake!
You could make so many variations of this it’s possibly endless. Some ideas below!
Some great bake mix ideas!
- Blondies with nuts and coconut.
- Upside down cake. Add canned fruit, brown sugar and vegan butter to bottom of pan before adding vanilla cake mix on top.
- Rocky Road brownies. Add mini vegan marshmallows and nuts before baking!
You shouldn’t be telling folks to eat raw batter. The real culprit of most E Coli isn’t the eggs, it is THE FLOUR.

For some reason, this recipe did not work for me. I used a can of butter beans. Even after baking for the recommended length of time, the bulk of the pan was almost liquid. Don’t know if baking it longer would have helped. Also, tasted a bit “beany.” Disappointed.
I’ve only used black beans or chickpeas so can’t speak to other beans sorry! My better boxed vegan brownies recipe is a more traditional recipe and I’ve only ever had perfect results!
