I love peppermint and chocolate. As soon as Black Friday comes it’s bye pumpkin and hello everything mint. Gingerbread is great too, but I’m partial to this holiday combo. I found a bag of peppermint cremes at the store but they were kind of expensive so I thought I’d make my own. I tried finding a recipe that had the creamy dreamy center I wanted and came up empty handed. There were tons of peppermint pattie copycat recipes out there on the web, but those have a harder peppermint center and were not what I was looking to recreate. So began the experiments to make my own (insert creepy mad scientist laugh here…)!
The mint filling I created is just the right amount of oozy fondant and refreshing mint and would be great as a dip for cookies or even mixed into hot cocoa but paired with bittersweet chocolate it’s a holiday treat that’s hard to beat.
This is a pretty simple recipe. You make the filling, melt some chocolate then using a candy mold or paper baking cups, you put in some chocolate, add some filling, top with some more chocolate then chill and eat! You can top these with crushed peppermint candies or sprinkles or just eat plain. Any way you make them, they’re tasty.
Make sure to use bittersweet chocolate. The filling is sweet so you need a darker less sweet chocolate to contrast the sweetness. I like a 72% cacao chocolate personally, but use your favorite. I use a microwave to melt chocolate, but you need to watch it carefully and take it out before it’s completely melted then finish melting by stirring. Chocolate can burn easily in the microwave. If you prefer, you can melt the chocolate in a double boiler or glass bowl placed over simmering water. To keep melted chocolate truly glossy you need to temper it and that’s a tricky process. Not really necessary for this recipe but if you know how to do it, by all means go for it. You can search online to learn more about the process of tempering chocolate.
This recipe makes as many cups as you want really and any size. You can make mini ones or big ones depending on your preference. Big or small they’ll taste the same. You can store these in a tin or container or even in the fridge. Some people like them frozen so that’s an option too! Leaving them in the paper baking cups is nice if giving them as a gift, but they’re so good, I doubt you’ll want to share. I hope you enjoy them!
