Vegan Copycat Taco Bell Mexican Pizza

After popular demand, I’m posting this super easy recipe for a copycat vegan Taco Bell pizza I made recently and posted to Instagram as a reel video. Truth be told, I’ve never had the original (vegan for 26 years) so I only hope it’s a faithful recreation but I dove deep into hard target pizza research to produce this soul satisfying snack stack (how’s that for alliteration!)

You don’t need too many special ingredients but you will need vegan refried beans (check those labels as they often use lard!), vegan ground meat (I used Morningstar Farms brand but use your favorite), vegan cheese (I used Miyokos brand new oat cheddar which I shredded myself) and enchilada sauce. I used fresh tortillas which are pretty amazing but if you only have cooked ones they’ll work fine as well. I would use flour and not corn. I actually found vegan Taco Bell brand refried beans so it was obviously meant to be(an).

A super quick and delicious vegan take on the popular Taco Bell Mexican pizza!

Ingredients

  • 4 fresh flour tortillas

  • 1 tablespoon plain vegetable oil (or more as needed)

  • 1 can vegan refried beans

  • 2 tablespoons jarred salsa

  • hot sauce (to taste)

  • 1 can enchilada sauce

  • 1 pack vegan ground beef

  • taco seasoning (to taste)

  • vegan cheddar and/or Monterey Jack style, shredded

  • toppings: fresh diced tomatoes, green onions, or black olives

Directions

  • In a pan slightly larger than your tortillas, place the oil and heat on medium until hot. Add the tortilla and brown on each side (they should also puff up) and transfer to a plate.
  • Sauté the ground beef with taco seasoning until browned and cooked through. You can use the refried beans as is, but I added salsa and some hot sauce so if using, add those and mix well.
  • Transfer 2 tortillas to a lined baking pan. Slather a generous portion of beans evenly to the bottom of each tortilla. Add the sautéed ground beef then place the other tortillas on top and press lightly.
  • Add an even layer of enchilada sauce to the top of the second tortilla then top generously with vegan cheese.
  • Bake in a 350° oven for about 10 minutes or until the cheese is melted and bubbly.
  • Add toppings if desired and cut into wedges and eat immediately.

Notes

  • If you cannot find fresh flour tortillas you can use precooked but I would caution against using corn tortillas.
